Crispy Cornflake Coating

In a large resalable plastic bag, combine 4 cups cornflakes, crushed, 1 TBSP vegetable oil, ½ tsp coarse salt, ¼ tsp ground pepper, and ½ tsp crumbled dried rosemary or thyme.

Steak Butter

Ingredients
* 4 tablespoons room-temperature butter
* coarse salt
* ground pepper
* 2 tablespoons (1 ounce) crumbled blue cheese
* 1 scallion, minced
* 2 tablespoons chopped fresh parsley
* 1 garlic clove, minced
* 2 tablespoons prepared white horseradish (squeezed of excess liquid)
* 1 tablespoon Dijon mustard
Directions
1. In a small bowl, mix the ingredient combination of your choice with 4 tablespoons room-temperature butter. Season with coarse salt and ground pepper.

Ingredients
Makes 1 1/4 cups (enough to season 5 to 10 pounds of meat, poultry, or seafood).
* 1/3 cup coarse salt
* 1/4 cup packed light-brown sugar
* 1/4 cup paprika
* 2 tablespoons ground black pepper
* 2 tablespoons dried oregano
* 2 tablespoons dried thyme leaves
* 1 tablespoon cayenne pepper (optional)
Directions
1. In a small bowl, combine all the ingredients, using your hands to break up the sugar. Store in an airtight container, away from heat and light, up to 6 months.

All-purpose Barbecue Rub
All-purpose Barbecue Rub
2TBSP chili powder
1TBSP paprika
2tsp dried oregano
2tsp garlic powder
½ tsp each: cayenne, black pepper, sugar, dry mustard, ground cloves, thyme, tarragon, celery seed, salt
Mix all ingredients well. Sprinkle over meat and rub in well.
