No-regrets Chocolate Cake

1 ¾ c. all-purpose flour
1 3/4c packed light brown sugar
3/4c cocoa powder
1 1/2tsp baking soda
1 1/2tsp baking powder
¼ tsp salt
1 1/4c reduced-fat buttermilk
3 large egg whites
4 TBSP light margarine, melted
1 ½ tsp vanilla extract
1c boiling water
1 TBSP confectioners’ sugar
Preheat oven to 350F. Lightly coat a 9x12” baking pan with cooking spray. In a large bowl, combine next 6 ingredients (flour through salt). Mix well with a fork to break up brown sugar. Set aside.
In a large mixing bowl, combine buttermilk, egg whites, melted margarine and vanilla. Mix on low speed until bleded. Gradually beat in boiling water. Then slowly add flour mixture and, again, mix on low speed until blended.
Pour batter into prepared pan and bake 25 minutes, or until a toothpick inserted in center comes out clean. Cool cake in pan on a wire rack. Sift confectioners’ sugar over top just before slicing into 12 equal squares.
