PUMPKIN BREAD

2/3 c. shortening
2 2/3 c. sugar
4 eggs
1 can (16oz) pumpkin
2/3 c. water
3 1/3 c. flour
2 t. baking soda
1 1⁄2 t. salt
1⁄2 t. baking powder
1 t. cinnamon
1 t. cloves
2/3 c. chopped nuts
2/3 c. raisins
Preheat oven to 350 degrees. Grease two 9x5x3-in loaf pans. Mix shortening and sugar; stir in eggs, pumpkin and water. Blend in flour, baking soda, salt, baking powder, cinnamon and cloves. Stir in nuts and raisins. Pour into pans. Bake about 70 minutes or until toothpick inserted in center comes out clean.
Notes by Bethany: I never use the nuts or raisins. I always use the shortening. I am sure you could use butter, but it tastes great this way. If it ain’t broke, don’t fix it.:) I love this fresh out of the oven or cold, plain, toasted with butter, untoasted or toasted with apple butter. It’s so good!!
