Quaker’s Best Oatmeal Cookies

1 ¼ c. butter
¾ c. firmly packed brown sugar
½ c. granulated sugar
1 egg
1 tsp vanilla
1 ½ c. all-purpose flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
¼ tsp nutmeg
3c. quaker oats (quick or old fashioned)

Heat oven to 375F. Beat butter and sugars until fluffy. Beat in egg and vanilla. Add combined flour, baking soda, salt and spices; mix well. Stir in oats. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 8-9 minutes for a chewy cookie, 10-11 minutes for a crisp cookie. Cool 1 minute on cookie sheet; remove to wire rack. Store tightly covered. Makes 4 ½ dozen.
