Simone Stuffed Chicken Breast

I just slice into the thickest part of the breast (make sure not to cut out through the bottom or top of the breast) with a sharp, small if possible, serrated knife. Make a whole as large as possible and then just stuff with anything. I used feta, artichoke hearts, and olives. You could use sundried tomatoes or anything else. I usually mix the stuffed ingredients in a small bowl and then stuff the breasts. With leftover mixture I put on top of the breasts and bake it. I also used the artichoke heart juice to bake the breasts in. Cover them, and bake at 350* or so, until done. Usually about 30 mintues or so. They tured out really good.
