Double Stuffed lower fat potatoes

Double Stuffed lower fat potatoes

4 medium sized potatoes
1-2 green onions sliced thin
1/2 cup fat free or low fat sour cream (in place of the buttermilk it called
for)
2 Tbsp margarine or butter
2 tsp parmesean cheese
Paprika to taste

Cook potatoes in oven for an hour at 400 degrees after poking holes in the
top or microwave until done (15-20 minutes)

Wait until the potatoes cool enough to handle, then halve and scoop out
potatoes into a medium mixing bowl-set skins aside for later use. Combine
green onion, sour cream and 1/2 butter. Mix on medium speed until blended.
Spoon potato mixture into each of the skins and arrange in a glass baking
dish. Dot remaining butter over each potato, sprinkle the parmesean cheese
and paprika over the top and bake for 20 minutes at 400 degrees or until
tops are slightly crunchy.

I did this from memory but I'm pretty sure it's all correct since it's so
fresh in my mind! If you have a recipe you like better all you need to do is
sub the fatty ingredient (like buttermilk, etc) for a lower fat dairy
product (I like sour cream because it gives the potatoes an extra "tang").
It works for me at least! :)
