Italian Chicken & Tomato Basil CousCous
(I just sorta made this up, so the measurements are total guesses)

Serves 4

1 Onion Diced
3 cloves of Garlic
2 T. Canola/Olive Oil
4 Boneless Chicken Breasts
1/2 T. Italian Seasonings
1/2 T. Dried Basil
Garlic Salt & Pepper to Taste
1 Can Diced Tomatos
4 Slices of Fresh Motzerella

Bruschetta Topping:
1 Whole Tomato Diced
2 Sprigs of basil julienned (add more to taste, we like a lot)
3/4 C. Shredded Motzerella
Mix all in a bowl and set aside.

Saute Garlic & Onions in Oil for about 3 minutes, then grill Chicken on top of sauted onions for 6 minutes on each side (Check to make sure that they are cooked through, this may vary for each thickness) season each side as you turn with the Italian Seasoning, Basil, Salt & Pepper. After Chicken if fully cooked, add can of Diced tomatos and simmer for about 10 minutes. While you simmer, prepare CousCous - Follow directions on box for 4 servings and set aside.
Now top each chicken breast with one slice of Motzerella and let melt in pan. Serve Chicken with tongs onto each plate, now mix all the remainings (diced tomato, onion, & garlic) into finished cous cous and serve aside chicken. Now garnish chicken with Bruschetta and serve!
