Breakfast Casserole

Breakfast Casserole

1 lb shredded potatoes
1/2 lb diced ham
1/2 c. chopped onion
3/4 c 2% shredded cheddar cheese
2 eggs
1 c. egg beaters
1/2 c skim milk

1. Spray crockpot with cooking spray.
2. Layer ingredients in order 1/3 at a time (potatoes, ham, onion, cheese)
3. In a bowl beat eggs, egg beaters, and milk
4. Pour egg mixture over layers in crockpot
5. Cook on low 8-10 hours
