HONEY WHEAT MUFFINS

1 c. all purpose flour
1/2 c. whole wheat flour
2 t. baking powder
1/4 t. salt
1 egg, beaten
1/2 c. milk
1/2 c. honey
1/4 c. oil
1/2 t. finely shredded lemon peel

Preheat oven to 400 degrees. In a mixing bowl stir
together both flours, baking powder and salt. Make a
well in the center.

In another bowl combine beaten egg, milk, honey, oil,
and lemon peel. Add egg mixture all at once to dry
mixture. Stir just till moistened (batter should be
lumpy). Grease muffin cups or line with paper bake
cups; fill 2/3 full. Bake 18-20 minutes or until
golden. Remove from pans; serve warm. Makes 12.
